Coffee Based Spice Rubs

What is a spice rub?

Anyone who appreciates good, flavoursome food knows that the secret is in the preparation. Spice rubs and blends have conventionally consisted of a mix of traditional herbs and spices combined with salt and pepper to produce a generic generic taste. They can be added to meats or vegetables ahead of cooking to infuse and enhance flavor. You can roll joints or cuts of any meat in the spices or massage the spice rub into the meat to ensure the flavors of the spices are absorbed.  Seasoning mixes typically incorporate a herb or two with some salt and pepper and are then sold under the veil of a unique blend of exotic spices. Our coffee based spice rubs however offer something a little different.


We have designed a range of spice rubs using coffee as the base to elevate the flavor and taste of your food. You can incorporate these into your cooking however you choose from barbecuing, grilling, charcoal based grilling, smoking or even in the conventional oven.

Why use coffee?

Coffee lovers the world over know and appreciate the use of this fabulous bean in many ways other than the traditional cup of morning joe. Coffee has a complex and deep taste, suited to much more than your average milky latte. There are already multiple foods that incorporate coffee with great success and coffee pairings are well known. Sweet dishes and desserts such as a decadent coffee and walnut cake for example, a velvety tiramisu, silky affogato or delightful coffee cream chocolates, are all based on the humble coffee bean. In the coffee hotspot of Central and South America the bean has been used for centuries to make authentic classics such as chicken mole and chilli.


There is a science to food pairings, and it is essential part of the process to ensure all aromas and tasting notes are brought out and utilised to their full potential. It is the same principle that is applied to the art of sommeliers, but it doesn’t and shouldn’t just stop with wine. Whilst taste is a good initial indicator of what works well together, there are often food and flavor combinations that people would never think of. Chocolate and avocado for example, strawberries and balsamic vinegar or cocoa in Bolognese sauce. We are firm believers that pairing coffee based spice rubs with your favourite dish is a must for everyone.


Sommeliers spend their careers learning and suggesting wine pairings for food based on the tasting notes in different wine varieties and how they can work with the flavors of the dish to uplift them. The same has been said of coffee – it has been agreed by many sommeliers that the perfect coffee based spice rub can bring another level to a meal. Like wine, coffee is acidic and it is this acidity that pairs well with meats, poultry, fish and vegetables. Also like wine, coffee contains tannins in varying degrees across varieties. Tannins act as a palate cleanser, a bit like a sorbet in between courses, to cleanse your mouth so you can really enjoy the deep flavors of your chosen coffee based spice rub carrier. There is another benefit to using our coffee based spice rubs that no amount of wine could bring. When used on meat, they will tenderize meat and create a moisture seal in the form of a delicious flavor crust.   


Coffee and caffeine go hand in hand, but you don’t need to worry about getting a caffeinated high from your food when using coffee based spice rubs so even if you are caffeine sensitive you can still use these spice rubs without worry. The actual amount of coffee used is minimal, as all coffee lovers will know it doesn’t take a great amount to get that special flavor. Just the smell of coffee is enough of a sensory experience to get an idea of the aromas and notes that it carries.

Tips for use

Our coffee based spice rubs can be used in a variety of ways and in different methods of cooking. If used with meat, there are different ways that these coffee based spice rubs can be used as a vehicle to infuse flavor. The following are some of the ways that we recommend to take your favourite dish to new heights:


  • Dry rub: this is a quick way to add a boost to your meat, fish or vegetables. Simply apply the seasoning of your choice to the food before, during or even after cooking. If you have the time, applying the dry seasoning to your food ahead of cooking is a great option as this will allow the aromas from the coffee based spice rub to penetrate your ingredients for a deep flavor.

  • Wet rub: this method acts a bit like a marinade. You can blend one of the coffee based spice rubs with a liquid of your choice – something sweet like maple syrup or honey are great options to bring out the soft coffee tones. Allow your meat, fish or vegetables to steep in the marinade for a few hours, or ideally overnight, before cooking as per your chosen method.

 

  • Sauce: we love to enjoy the full flavor of our coffee based spice rubs. These blends can be mixed with a liquid, water, syrup, honey, or for a more decadent dish try a wine or even cream. The final product can then be used as a dressing or rich sauce, whether you choose to cook in it or not this is a great option.

  • Seasoning: perhaps the simplest option, our coffee based spice rubs can literally just be sprinkled over your dish during the cooking process or as a delicious and vibrant alternative to a sprinkle of salt and pepper.

Spice rubs are typically suited to barbecuing or grilling as they are traditionally developed with these methods of cooking in mind. Chipotle Espresso Coffee Rub

This special coffee based spice rub will give a sweet and spicy balance with coffee providing the balanced body and the chipotle bringing a smoky edge. True to the much loved chipotle pepper there is a rich cocoa flavor and a mild, earthy spiciness to this coffee based spice rub. This is a great option for meat and poultry as the spice blend adds a twist to classic grilling plates. Why not try our favourite recipe? This uses a wet rub method described earlier:


Mix 4 tablespoons of our Chipotle Espresso Rub with 1/4 cup of balsamic vinegar and 2 teaspoons of vegetable oil. Apply generously on all surfaces of your chosen base and either cook immediately or marinate for as little as half an hour to overnight in the refrigerator.

Texas 12 Spice Coffee Rub

A special and distinctive coffee based spice rub, this Texas 12 Spice Coffee Rub will take you straight to the deep south. This rub has it all, the spices work in harmony with each other to give a sweet yet savoury finish with salty undertones and a touch of spiced heat. This spice rub will transport you to a traditional Texan grill as soon you start cooking.
